SUSU NABATI SEBAGAI ALTERNATIF SUSU RENDAH KALORI UNTUK DIET DAN PENDERITA INTOLERANSI LAKTOSA

Susu merupakan sumber nutrisi penting yang berkontribusi terhadap pertumbuhan dan kesehatanmanusia karena mengandung karbohidrat, protein, vitamin, dan mineral yang dapat diserap dengan mudah oleh tubuh. Namun, seiring bertambahnya usia terjadi penurunan aktivitas enzim laktase yang mengakibatkan intoleransi laktosa dengan gejala seperti kembung, diare, dan nyeri perut. Keadaan ini mendorong pencarian alternatif pengganti susu sapi yang mengandung nutrisi seimbang tetapi tanpa laktosa.
Salah satu opsi yang banyak diaplikasikan adalah susu dari sumber nabati, seperti susu almond, oat, kedelai, dan hazelnut. Susu nabati tidak mengandung laktosa serta memiliki keragaman komponen bioaktif, serat pangan, dan lemak tak jenuh yang bermanfaat bagi kesehatan metabolisme serta mendukung diet rendah kalori. Kandungan karbohidrat pada susu nabati lebih bervariasi, meliputi glukosa, fruktosa, sukrosa, maltosa, rafinosa, hingga sorbitol, dengan nilai energi dan lemak jenuh yang lebih rendah dibandingkan susu sapi. Susu nabati berpotensi menjadi alternatif bagi penderita intoleransi laktosa dan individu yang menerapkan pola makan rendah kalori, tanpa mengabaikan kebutuhan mikronutrien esensial yang tetap perlu dipenuhi melalui diet seimbang.

Abstract
Milk is an important source of nutrients that contribute to human growth and health because it contains carbohydrates, proteins, vitamins, and minerals that can be easily absorbed by the body. However, as we age, there is a decrease in lactase enzyme activity, which causes lactose intolerance with symptoms such as bloating, diarrhoca, and abdominal pain. This condition has led to the search for alternatives to cow's milk that contain balanced nutrients but are lactose-free. One widely used option is plant-based milk, and as almond, oat, soy, and hazelnut milk. Plant-based milk does not contain lactose and has a variety of bioactive components, dietary fibre, and unsaturated fats that are beneficial for metabolic health and support a low calorie diet. The carbohydrate content in plant-based milk is more varied, including glucose, fructose, sucrose, maltose, raffinose, and sorbitol, with lower energy and saturated fat values compared to cow's milk. Plant-based milk has the potential to be a suitable alternative for people with lactose intolerance and individuals who follow a low-calorie diet, without neglecting the needs of essential micronutrients that still need to be met through a balanced diet.
