Abstrak
Seiring dengan meningkatnya konsumsi ikan di Indonesia dari 54,56 kg/kapita menjadi 59 kg/kapita dalam empat
tahun terakhir, berkontribusi terhadap penambahan limbah ikan yang dihasilkan, termasuk kepala, kerangka, sisik,
organ dalam, hingga sisa fillet. Keberadaan limbah ikan ini yang sering kali belum dimanfaatkan secara optimal.
Komposisi nutrisi dalam limbah tulang ikan salah satunya adalah protein yang berpotensi untuk diolah lebih lanjut
menjadi protein hidrolisat. Protein hidrolisat merupakan bentuk lebih sederhana berupa peptida bioaktif dan asam amino
yang lebih mudah dicerna. Jenis ikan dan bagian limbah yang berbeda akan berpengaruh terhadap jumlah protein
hidrolisatnya. Berbagai metode pengolahan dapat diterapkan, mulai dari proses kimia (asam-basa), enzimatis (hidrolisis
protease), hingga proses mikrobiologis melalui fermentasi. Setiap metode bekerja secara spesifik yang mempengaruhi
derajat hidrolisis dan jumlah peptida yang diperoleh. Pemanfaatan protein hidrolisat limbah ikan sebagai upaya fortifikasi
dan enrichment pada berbagai produk pangan. Inovasi produk pangan dengan formulasi penambahan protein hidrolisat
yang tepat dapat meningkatkan komposisi nutrisi tanpa mengubah sifat fisik dan kimia dari produk. Dengan demikian,
makalah ini bertujuan mengkaji pengolahan limbah ikan dengan metode hidrolisis serta pemanfaatan hasilnya sebagai
sumber protein hidrolisat.

Abstract
Along with the increasing fish consumption in Indonesia from 54.56 kg/capita to 59 kg/capita over the past four
years, the amount of fish waste produced has also risen, including heads, bones, scales, internal organs, and fillet
residues. This fish waste is often underutilized, despite its valuable nutritional composition. One of the major nutrients
in fish bone waste is protein, which has the potential to be further processed into protein hydrolysates. Protein
hydrolysates are simpler forms consisting of peptides, bioactive peptides, and amino acids that are more easily
digested. The type of fish and the specific part of the waste used can influence the yield and characteristics of the
resulting hydrolysate. Various processing methods can be applied, including chemical (acid-base), enzymatic (protease
hydrolysis), and microbiological (fermentation) approaches, each affecting the degree of hydrolysis and the amount of
peptides produced. The utilization of fish waste protein hydrolysates can serve as a fortification and enrichment
strategy in various food products. Proper formulation of food products with added protein hydrolysates can enhance
their nutritional composition without altering their physical or chemical properties. Therefore, this paper aims to
review the processing of fish waste using hydrolysis methods and the utilization of the resulting products as a source of
protein hydrolysates.
