STUDI CEMARAN LOGAM BERAT PADA SAYURAN SEGAR DAN SAYURAN KALENG

Keamanan pangan merupakan aspek dasar dalam menjaga kesehatan masyarakat dan memastikan terpenuhinya kualitas gizi. Ketersediaan pangan yang bebas dari cemaran biologis, kimia, maupun fisik menjadi syarat utama untuk menjamin keamanan konsumsi masyarakat. Salah satu isu keamanan pangan adalah kontaminasi logam berat pada sayuran segar dan produk olahannya seperti sayuran kaleng. Penulisan karya ilmiah ini bertujuan untuk mengkaji cemaran logam berat pada sayuran segar dan sayuran kaleng. Berdasarkan hasil studi pustaka, logam berat seperti timbal (Pb2+), kadmium (Cd2+), arsen (As3+), dan kromium (Cr2+) bersifat toksik dan dapat terakumulasi dalam jaringan tubuh manusia sehingga menimbulkan gangguan kesehatan apabila dikonsumsi melebihi batas aman. Pada sayuran segar, kontaminasi logam berat dapat melalui berbagai sumber, seperti tanah yang tercemar, air irigasi yang mengandung polutan industri, dan penggunaan pupuk serta pestisida yang mengandung logam berat. Pada sayuran kaleng kandungan logam berat dapat berasal dari bahan baku, migrasi logam dari bahan kemasan selama proses sterilisasi suhu tinggi, penggunaan bahan pengatur keasaman, serta interaksi antara medium pengisi asam dengan dinding kaleng. Oleh karena itu, dapat disimpulkan bahwa pencegahan kontaminasi logam berat pada sayuran segar dan kaleng dapat dilakukan dengan memastikan tidak ada cemaran dari lingkungan, khususnya dari medis tanam dan air irigrasi, serta aplikasi proses pengolahan dan penggunaan bahan kemasan yang aman.

Abstract
Food safety is a fundamental aspect of maintaining public health and ensuring adequate nutritional quality. The availability of food that is free from biological, chemical, and physical contaminants is essential to guarantee safe consumption and protect human well-being. One of the most concerning threats to food safety is heavy metal contamination in fresh vegetables and their processed products, such as canned vegetables. Therefore, it is essential to monitor heavy metal contamination in fresh and canned vegetables. Based on literature studies, heavy metals including lead (Pb2+), cadmium (Cd2+), arsenic (As3+), and chromium (Cr2+) are toxic and can accumulate in human tissues, leading to severe health disorders when consumed in excessive amounts. In fresh vegetables, heavy metal contamination originates from various sources, including polluted soil, irrigation water contaminated with industrial pollutants, and the use of fertilizers or pesticides that contain heavy metal residues. In contrast, elevated levels of heavy metals in canned vegetables can result from contaminated raw materials, metal migration from packaging during high-temperature sterilization, the use of acidulants, and interactions between acidic filling media and the can’s inner surface. Therefore, it can be concluded that the prevention of heavy metal contamination in fresh and canned vegetables can be achieved by ensuring the absence of environmental pollutants, particularly from the growing media and irrigation water, as well as through the implementation of proper processing techniques and the use of safe packaging materials.
